I have an Evernote obsession. Packing lists, random ideas, drafts of letters and blog posts – I’ve kept every digital idea from the last decade in one note or another. Recipes are no exception.

I’ve kept a running list of my favorite recipes to cook along with substitutions and tweaks for the next time around. Fast forward a few years and I have a veritable treasure trove of delicious, easy recipes that no self respecting food blogger would ever post online.

Everything is scaled to use complete package sizes, dried spices, canned beans, frozen meats and 2 tablespoons of taco seasoning. Nothing is fancy, over the top or worth posting to Instagram about, but it IS all delicious, reasonably nutritious and super easy to cook. Bon appetit!

Slow Cooker Chicken Chili

Ingredients

  • 1 tablespoon oil
  • 1 diced onion
  • 1 diced bell pepper
  • 1/2 teaspoon salt
  • 6 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 3 tablespoons chili powder
  • 1 teaspoon sugar
  • 1 (14oz) can fire roasted diced tomatoes
  • 1 (14oz) can kidney beans, drained
  • 1 (14oz) can pinto beans, drained
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1lb chicken breasts (frozen is fine)

Directions

  1. In a 4qt or larger slow cooker, mix all ingredients except chicken breasts
  2. Lay chicken breasts on top of mixture
  3. Cook on low for 6-8hr
  4. Shred chicken 30min before serving
  5. Serve over noodles, with cheese, sour cream… you’re an adult, do what you want.

Slow Cooker Chicken Tacos

Ingredients

  • 1lb chicken breasts (frozen is fine)
  • 3/4 cup chicken broth
  • 3 tablespoons taco seasoning
  • Taco fixings

Directions

  1. Mix broth and seasoning in slow cooker
  2. Add chicken breasts, set to low for 6-8 hours
  3. 30 min before done shred chicken, then let sit with lid off to thicken
  4. Make tacos!

Slow Cooker Tuscan Chicken

Ingredients

  • 1lb Chicken Breasts (frozen is fine)
  • 1/2 tsp dried rosemary
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup chicken broth
  • 2 tablespoons sun-dried tomato paste
  • 1 can cannellini beans, drained and rinsed

Directions

  1. Mix all ingredients except chicken into slow cooker
  2. Place chicken breasts on top of mixture
  3. Cook on low 6-8 hr
  4. Shred chicken 30min before serving
